Mushroom Cultivation

After a mushroom experience in the Netherlands that I believe bordered 
on religious, I have been studying home mushroom cultivation. It seems 
straight forward and simple enough save one aspect - sterility. There's 
one thing that doesn't make sense to me.

It seems that the name of the game as far as successfully cultivating 
the food of the gods is sterility.  Every precaution seems to be 
necessary as far as preserving sterility, even from s****es and bacteria 
in the air.  How is it then that psilocybin mushrooms thrive in cow 
pastures, growing directly from cow ****.  The key word here is "****" - 
one of the foulest, most bacteria ridden substances that can be found in 
our general environment.  Not only do they thrive directly in ****, but 
also in soil that is fully saturated with decades worth of cow **** and 
urine and all sorts of nastiness.

How can that be if such steps must be taken to ensure sterility - even 
in places like a bedroom closet or living room - when they grow and 
thrive in cow ****?

....just doesn't make sense....any opinions, views, advice, etc. on this 
anomaly?
